Neptune Chowder

Ingredients
1 large onion, chopped3 stalked chopped celery2 cups water1 lb white fish2 Tbsp butter2 potatoes, peeled and diced2 cups milk2 cups shredded cheddar cheese
Directions
In a 3 quart saucepan, saute onions and celery in butter until tender. Add water, Potatoes, carrots, salt and pepper; bring to a boil. Reduce heat; cover and simmer for 10 minutes. Add fish and simmer 10 minutes longer. Stir in milk and cheese until cheese is melted. Do not boil.
