Cheesy Cauliflower Veggie Soup

-Garlic powder -1 medium head chopped cauliflower-1 cup chopped carrots-1/2 cup chopped green pepper-3/4 cup chopped zucchini-1/2 c chicken broth-1 1/2 c 2% milk-1 1/2 c water-6 T whole wheat flour-4 oz. marble cheddar cheese-salt, optional-pepper, optional-4 Keebler Club crackers, optional
In a large saucepan, combine vegetables and broth. Bring to boiling. Reduce heat; cover and simmer 12 to 15 minutes until veggies are tender.
In a medium bowl, stir together milk and flour; stir into mixture. Cook and stir over medium heat until thickened and bubbly. Remove from heat. In a food processor or blender, blend soup until partially pureed. Return to saucepan; add cheese and season to taste. Cook 2 to 3 minutes more or until cheese melts.
Serve with crackers or croutons
