Crock Pot Chicken Fajitas

Ingredients
1.5 lbs boneless skinless chicken breasts (about 4-5 chicken breasts)1 onion, thinly sliced (I use red onion)2 jalapeno peppers**1 red bell pepper, sliced in half-circle slices1 yellow bell pepper, sliced in half-circle slices2 teaspoons chili powder1 package Fajita seasoning1/4 teaspoon salt1/2 cup chicken broth (I used homemade chicken stock)2 tablespoons fresh lime juice (or more, I use about 3 T)
Directions
Put trimmed chicken breasts, sliced onion, jalapeno, sliced yellow bell pepper, and sliced red bell pepper into crockpot. Squeeze 2-3 T fresh lime juice over top of chicken and vegetables. Mix together chile powder, salt, fajita package and chicken broth and pour over.

Cook 3-4 hours on high or 6-7 hours on low.

    I have made this recipe twice in the past few weeks for my husband. It instantly became one of his favorite meals. Served with low-calorie tortillas, it is very filling and tasty. Love the hint of lime - adds a lot of flavor without being too strong. - 11/22/14
