Ingredients
1/2 cup Aunt Jemima Yellow Corn meal1/2 cup all purpose flour2 tsp. baking powder1/4 tsp. salt1/2 cup unsweetened almond milk1 egg white2 Tbsp. unsweetened applesauce
Directions
Preheat oven to 425. Spray 4 muffin cups with cooking spray. Combine corn meal, flour, baking powder, and salt in a medium mixing bowl. Add milk and egg white, mix until blended. Add applesauce, mix well. Pour into muffin cups and bake for 15 minutes or until toothpick inserted in center comes out clean.
