Black Beans & Quinoa with Smoked Salmon

1 C Dry Quinoa cooked in 2 C. water with a touch of salt if you likeCan drained and rinsed Black Beans1/2 diced yellow onion2 medium diced carrots1-2 stalks celery diced4 minced cloves garlic5 oz dry smoked salmon pulled into bites1/2 C. fresh spinach chopped1 T. salsafresh avocado topping
Boil the quinoa in water. When it boils, add lid and turn to low until plumped. Keep covered and off until needed.
Next, saute the veggies in a tsp of olive oil until just translucent. Add the beans, spinach and salmon and simmer. Once done, mix into the quinoa or serve on top of quinoa with a topping of salsa and fresh avocado slices.
