1/4 cup of olive oil1 bay leaf3 cloves of garlic2 med onions chopped1.5 large potatoes chpped1 large eggplant chopped2 med zucchini choppedsalt and pepper1 28oz can of tomatos1 cup of chicken stock
add oil to pot on med heat, add garlic and onion. add everything else besides the stock and tomatoes. cook stirring constantly till vegies are tender about 10 minutes. Add stock and tomatoes bring boil. Simmer for 5 min. Serve
