lemon Chicken rice Soup

Ingredients
3 quarts chicken broth4 cups chopped cooked chicken1 cup uncooked brown rice3 lemons juiced to equal 1 cup2 cups chopped fresh spinach1 cup chopped carrots1/2 cup chopped onion1 tablespoon olive oil1 cup chopped mushroomsIn a large pot heat the oil. Saute the onion, mushrooms, and carrots until onions are clear. Add broth and lemon. Bring to a boil add rice bring to a boil again. Cover and simmer 20 minutes. Add spinach and chicken simmer 5 more minutes.6 servings
