Fresh Vegetable Fried Rice

4 cups cooked brown rice8 cups fresh vegetables (ie. Broccoli, Cauliflower, Red Cabbage)1 cup onion, chopped4 eggs, lightly beaten2 tbsp canola oil1 tbsp soy sauce
In a large pan, heat oil on medium-high heat. Add onion and rice. Stir and cook until onion is soft, about 5 minutes. Reduce heat to medium and add vegetables. Cook 5-7 minutes or until desired softness. Scramble eggs and add to mixture. Sprinkle with soy sauce and serve warm.
