Highway Market Pickled Eggs

2 dozen eggs2 1/2 cups white vinegar3 tsp salt3 tbsp sugar
Boil your eggs until hard, using your favourite method.
Cool. Peel the eggs, being careful to remove all shell and albumen.
In a saucepan, stir together the vinegar, water, salt and sugar. Boil for 15 minutes until the salt and sugar are well dissolved. Stir a couple of times.
Put a dozen eggs in each jar. Pack them in nice and tight.
When the syrup is done, pour carefully over the packed eggs until the eggs are covered (about half the syrup per jar).
Put the lids on TIGHT. Mark with the date. Put in the fridge to cool and keep for at least a week before eating.
