Thai Chicken Salad Wraps

Ingredients
4 oz chicken breast, diced1 tbsp mayonnaise1 tbsp sour cream1/4 c diced red onion2 tsp chopped fresh cilantro1 tbsp curry powder1 tsp grated fresh ginger rootpepper, to taste1/4 c cashews or peanuts (optional)lettuce leaves
Directions
This is a NO COOK! Using precooked chicken makes this super quick and easy! Combine all ingredients except lettuce leaves. Serve wrapped in lettuce leaves. This is a fun appetizer or light lunch. *For extra kick add 1-2 tsp of sambal oelek - soooooo yummy! Makes enough for 2 appetizer servings or 1 lunch serving.
