Indian lamb & spinach curry (CSIRO)

2 tablespoons olive oil2 onions, sliced2 cloves garlic, crushed1/2 teaspoon cardamom seeds1 teaspoon ground cinnamon1 tablespoon garam masala2 teaspoons turmeric800 g lamb leg, cubed1/2 cup low-fat natural yoghurt1 x 400 g tin chopped tomatoes1 x 250 g packet frozen spinach1 cup water2 tablespoons shredded mint1/2 cup coriander
Heat oil and add onions and garlic and cook until onion is golden. Add spices and lamb, mix well and cook until lamb begins to cook and change color. Stir through yoghurt, then tomato. Add spinach and water, then reduce heat to medium and cook for 40 minutes or until meat is tender.
Stir through mint and coriander and serve with rice.
