Baked Grapefruit

Ingredients
1 grapefruit1 teaspoon honey2 teaspoons shelled and finely chopped pistachios
Directions
Preheat oven to 325 degrees.

Slice the grapefruit in half.
If your grapefruits are tipping over, use a knife to remove a thin layer from the bottom, taking care not to expose the flesh.
Use a paring knife to separate the grapefruit segments (optional). Run the knife between the inner flesh and the white pith between the flesh and rind.
The grapefruit halves on a rimmed baking sheet and top with the honey and chopped pistachios.
Bake for 15 minutes.

Serve warm.

    Never liked grapefruit (too bitter) but this recipe is fabulous! I tried it w/honey on 1 side of my half, and blueberry jam on the other.     Please be mindful of any prescription medications that might react with grapefruit or grapefruit juice. I love grapefruit but can't eat it now because I take a cholesterol medication, generic for Lipitor. Read labels on your medications! - 3/28/13

    Back in the '70's when I was in Weight Watchers, we had a recipe for broiled grapefruit, much like this, but without the nuts, and broiled for a couple of minutes instead of baked. - 2/6/12

    I learned to like grapefruit after I learned to peel it and take the sections out rather than try to scoop out after it's cut in half.     We would eat grapefruit just like this (not baked) with our meals so this is so refreshing, a comfort food for me. Simply and yet, filling. The skin is what makes it bitter to me and the nuts add crunch the honey, a touch of sweetness. You could probably do any citrus like this. So good and go - 2/7/21
