1 cup fresh spinach, reduced fat sour cream, neufchatel cheese, ripe tomato, flour tortilla, Buddig turkey, chicken or beef
Rinse, shake dry and dice one cup of fresh spinach. Dice half of a fresh tomato. In a small pan combine sour cream and neufchatel cheese, turn on low heat. Add spinach, and enough water (a teaspooon maybe) to make it creamy. Cook for 1 to 2 min on low heat until spinach is soft and mixture is hot. Cook more to reduce if necessary. Warm a flour tortilla, and place mixture on tortilla. Spread to the edges to cover the whole tortilla. Plce diced tomato on top, and add diced Buddig meat.
