Ingredients
1/2 cup red lentils1/4 cup yellow lentils2 cups water1 tsp ginger pulp1 tsp garlic1/4 tsp turmeric1/4 tsp garam masala or mild curry powder2 green chiles, chopped1 1/2 tsp salt, or to taste1 tbsp canola oil1 large onion, chopped1 large tomato, chopped1 tsp brown mustard seedsDried chiles, to tasteChopped cilantro, to garnish
Directions
Rinse and pick through the lentils. Boil them together with the ginger, garlic, green chiles, turmeric, and garam masala for about 20 minutes. Meanwhile, saute the onion, tomato, mustard seeds, and dried chiles quickly over high heat, just until they develop some color. Puree the lentils, if desired, and stir in the sauteed veggies. Garnish with cilantro. Yields four 1-cup servings.
