Tzatziki sauce:1 cup plain Greek Yogurt1 regular cucumber, peeled and seeded1 teaspoon minced garlic1 teaspoon white wine vinegarsalt and peppersqueeze of fresh lemonChicken:1 teaspoons minced garlicjuice of 1 lemon (2-3 Tablespoons)2 teaspoons red wine vinegar2 Tablespoons extra virgin olive oil2 heaping tablespoons plain greek yogurt1 tablespoon dried oreganosalt and pepper1 1/4 lbs boneless skinless chicken breastsPita Bread - Joseph's Flax Oat Bran and whole wheat are awesome and very low calories - 60 per pita
Directions:
Shred the cucumber or chop in food processor. Wrap in a towel and squeeze to remove as much water as possible. Mix together yogurt, shredded cucumber, garlic, white wine vinegar, salt/pepper and lemon juice. Refrigerate for at least 30 minutes before serving to allow flavors to meld.
To prepare chicken, combine the garlic, lemon juice, red wine vinegar, olive oil, yogury, oregano, and salt/pepper to taste in a medium bowl. Whisk together until mixed well. Add the chicken pieces to the bowl and mix to coat. Cover and refrigerate at least one hour. Recommed overnight.
Cook chicken as desired either in skillet, grill or broiler. Once chicken is completly cooked cut in strips, heat pitas.
Top with chicken, tzatziki sauce, diced tomatoes and sliced onion. Serve immediately.
