Pita Pita Egg Beata

Ingredients
1/4 cup Egg beaters or equivalent egg substitute3 medium mushrooms, sliced1/2 whole wheat pita1 Tbsp. Vegenaise (Vegan Mayo) or low-fat/fat-free mayo1/4 tsp. black pepper4 small tomato slices*if too bland add a dash of salt to the egg mixture
Directions
Cut a whole whole wheat pita in half and toast to your liking. Spray a glass container with cooking spray. Add liquid egg, mushrooms and pepper. Cook in microwave for 2 minutes. When pita cools add Vegenaise or low-fat/fat free mayo and sliced tomato. Dump the egg mixture into the pita. Eat up!!!
