Easy Chicken Cordon Blue

Ingredients
2 large boneless, skinless chicken breastssalt and pepper2 Tbsp olive oil2 Tbsp cream cheese4 slices canadian bacon2 slices swiss cheese1/4 cup bread crumbs1 Tbsp fresh or 1 tsp dried parsley
Directions
1. Preheat oven to 400 degrees. Spray an 8x8 glass baking dish with non-stick cooking spray.
2. Season both sides of chicken breasts with salt and pepper. Heat a non-stick frying pan over medium-high heat. Add chicken and cook until lightly browned on each side, about 4 minutes per side.
3. Ina small bowl, combine bread crumbs, olive oil and parsley.
4. Place chicken in baking dish and spread cream cheese ove both breasts. Lay 2 slices of canadian bacon on each breats, then top with a slice of swiss cheese. Sprinkle with bread crumb mixture.
5. Bake in oven, uncovered until chicken is cooked through, 10-20 minutes.
