2 tsp. Olive Oil2 Onions, chopped3 Cloves of Garlic, minced2 tsp. Ground Cumin¼ tsp. Cayenne Pepper2 tbs. All purpose flour7 c. Chicken Broth (or Veg broth)1 ½ c. Dry Red Lentils, rinsed2tbs. Tomato Paste1 can (385ml) carnation fat-free evaporated milkSalt & Black PepperChopped fresh Cilantro (optional)2 tsp. Olive Oil
Heat oil in a large saucepan over medium-high heat; cook onions and garlic about 2min. Or until softened. Stir in cumin and cayenne; cook, stirring for 1min. Stir in fluor until combined. Stir in broth, lentils and tomato paste. Cover and bring to boil, stirring occasionally. Reduce heat; simmer 25-][30mins or until lentils are tender. Gradually stir in evaporated milk, salt and pepper. Gently reheat over medium-low heat until just heated through, takin care not to boil. Garnish with cilantro if desired.
