Southern Corn Bread Muffins

Ingredients
1 C enriched all-purpose flour, unbleached2 C yellow cornmeal1/3 C sugar4 tsp baking powder1 tsp Kosher salt1 large egg1 C nonfat milk1/3 C unsalted butter, melted
Directions
Preheat the over to 400 degrees. Grease muffin cups.
Mix dry ingredients together.
Mix wet ingredients together.
Stir the wet into the dry.
Fill muffin cups to 3/4 full.
Bake for 20 minutes.
Allow to cool on wire rack.
