"Light" Garlic Parmesan Mashed Potatoes

2 medium sized potatoes, chopped, skin on1/2 cup lactaid milk (or regular 2% milk)2 tbsp unsalted butter 1 tbsp shredded parmesan cheese1heaping tsp garlic powder (not garlic salt!)salt and pepper to taste
In a large pot with unsalted water, boil the potatoes until they are fork tender. Drain the water and place a dry towel over the top of the pot, let the potatoes dry out for about 2-3 minutes. Meanwhile, in a microwave safe cup or measuring cup, warm your lactaid milk (or regular %2) in the microwave for 30-60 seconds. It just needs to be warmed up, don't boil or scald. Add the milk, butter, garlic powder and s&P to the potatoes and smash with the back of your fork or a smasher. You may also use a hand blender for very fluffy potatoes. At the end sprinkle in your cheese and serve piping hot! If you dig the taste of butter substitutes you could probably use 2 tbsps of that instead.
