Quinoa cooked with Beer, Mushrooms and Onions

1 Tbsp butter4 tsp extra virgin olive oil1 small red onion, sliced2 cups mushrooms1 cup dark beer1 cup vegetable stock1 cup quinoa1/4 tsp salt (to taste)1/8 tsp pepper.5 tsp sage
Heat butter and olive oil in a medium pan over medium-high heat.
Add the onions and mushrooms and cook until browned, about 10 minutes. When the onions are soft and the mushrooms browned, add the remaining ingredients.
Cover, reduce heat, and simmer for 20 minutes, or until all the liquid is absorbed. Turn off heat and let sit 5 minutes. Serve warm.
