Asparagus and Potato Frittata

Ingredients
8 fresh large eggs (or egg substitute. nutrition based on both);1/4 cup Grated parmesan cheese;3 tbs fresh parsley, minced;1 Tbs Olive Oil1 medium potato1 medium yellow onion1 bunch of fresh asparagus3 cloves of garlic6 oz 2% Cheddar Shreds;Salt, pepper, cayenne pepper to taste
Directions
whisk eggs, parm, parsley, salt, pepper, and cayenne ;
cook potatoes about 8 mins, remove;
saute onion about 5 minutes; add garlic and asparagus and cook about another 4 minutes.
Return potatoes and add eggs to pan. Mix in cheese. Cook without further stirring, about 10 minutes (while the broiler heats). Move pan to broiler and brown 1-3 minutes, until firm. Cut into wedges and either serve or store for daily breakfast.
