Linda's Italian Minestrone Soup

Ingredients
3 T olive oil3 cloves garlic2 onions, chopped2 c. chopped celery, including some greens5 carrots, sliced6 t. McCormick beef base in 4 cups of water2 additional cups of water2 15 oz. cans of tomato sauce1 can of kidney beans, drained1 can of chickpeas, drained6 oz. frozen green beans2 c. frozen spinach2 t. oregano1 T. dry basil1/4 t. thyme3/4 or 2 oz. whole wheat pastasalt & pepper
Directions
Saute garlic, onion, celery in olive oil in large stock pot. Add the rest of the ingredients, adding pasta and spices last.

Simmer for 30 - 60 minutes
