Katt's Winter Soup

Ingredients

1 c. carrots, diced1 c. celery, diced1 c. onions, diced1 tsp. garlic2 Tbsp E.V. olive Oil4 chicken thighs,boneless skinless, cooked & chopped1 c. dry soup mix (I use Western family)1 box Campbells 30% less sodium chicken broth (900 ml)6. c water
in dutch oven or soup pot, heat oil.
sauté carrots, onions, celery & garlic until onions translucent.
add all remaining ingredients.
bring to a boil, boil for 10 minutes, then reduce and simmer with lid slightly ajar for 30 min to 1 hour.
when reducing to a simmer, add salt, pepper and other seasonings to taste.
Serving Size: makes 8, 1 cup servings
