Whie bean Veggie Couscous

1 cup couscous1 1/4 cup Chicken Broth1/2 onion diced1 pepper (any color)1 can Sweet yellow corn1 can Great northern beans1 tbsp White Wine Vinager1 tbsp Lime Juice1/2 tsp Cumin1/2 tsp Oregano leaves1/2 tsp Parsley flakes1/2 tsp Basil Leaves
Bring water to a boil in 2 qt sauce pan and stir in couscous. Cover pit and remove from heat. Let stand 5 min.
In large bowl, mix together corn, bean, onions, peppers, lime juice, white wine vinager and spices. FLuff couscous well, breaking up any chuncks. Add to the bowl with veggies and mix.
Season with salt and pepper to taste, and serve at once or chill.
Serving Size: makes 8 1 cup servings
