3 Bean Turkey Chili

Ingredients
1 lb ground turkey1 med onion, chopped1 med green bell pepper, chopped3 tsp minced garlic1/2 tbsp olive oil1 can reduced sodium chicken broth1 14 oz can diced tomatoes, undrained1 14 oz can pinto beans, drained and rinsed1 14 oz can black beans, drained and rinsed1 14 oz can kidney beans, drained and rinsed1 tsp each oregano, cumin and pepper1/4 tsp cayenne pepper (or to taste)
Directions
In a large saucepan brown turkey in olive oil, breaking into bits. Add onion, bell pepper and garlic, saute until soft. Add tomatoes, beans, chicken broth and spices. Bring to a boil and simmer 1/2 hour or until thickened a little. Always better the next day!

    I am giving this recipe 5 stars only because I tweaked it a bit. I used black, kidney and garbanzo beans; the canned tomatoes were already seasoned and had no added salt; and after putting it all together, I added two 8 ounce cans of tomato sauce plus 2T tomato paste. Yum! - 10/1/11

    Yummy, I added a can of corn, replaced the chicken broth with about 8 oz of marinara sauce, plus used a large can of tomatoes. My first time using turkey in chili. We didn't miss the beef at all. - 2/4/11

    Awesome! I didn't have the pinto beans or oregano, so I left out the pinto beans and substituted italian seasoning for the oregano. I also used Mexican stewed tomatoes (chopped) instead of the diced tomatoes. Will definitely make it again! - 2/3/09

    Made some variations b/c I didn't have pinto beans (used light red kidney beans alon with the dark red kidney beans and black beans) and I didn't have diced tomatoes(I used 2 10 oz cans of ROTEL instead). I added some water b/c it was very thick. But, this chili is fantastic. - 4/24/08
