Leek & Gold Potato Soup Wellspring

8 Yukon Gold potatoes, peeled and cut into 1/2 in pieces2 large Leeks, white and pale green parts only, cleaned and chopped1 Onion, chopped1 quart fat-free, low sodiium chicken brothsalt and pepper
Combine potatoes, leeks, onion, broth, and pepper in a large bot and bring to boil.
Reduce heat and simmer, covered until vegetables are tender, 22-25 minutes.
Remove from heat and let cool for10 minutes.
Use immersion blender to mash into puree
Serving Size: Makes 4 1 cup servings
