Broiled Eggplant

Ingredients
1 eggplant1 tablespoon Olive oilkosher salt
Directions
Peel & cut eggplant according to the thickness you desire
put kosher salt on both sides & allow to sit & sweat for 20 min.
rinse well & pat dry brush with olive oil
broil for approx 4 min per side but watch carefully as they will burn fast particularly the thinner you cut them
