Chicken Scallopini- 3bassets' version

chicken - boneless,skinless breasteggcream of mushroom soupbread crumbShedd's Spreadonionwaterlemon juiceground thymedried parsleymushrooms
cut chicken breast into "scallop" size cubes.
Mix egg with a small amount of water or can use egg whites in on shallow dish. Place bread crumbs in another shallow dish or on a plate. Dip chicken into egg then into crumbs to coat.
Heat butter in large frying pan and brown chicken on both sides, I pretty much cook it most of the way.
Add mushrooms (if using fresh you will need to remove chicken and brown the mushrooms then add chicken back in.)
Stir in soup, water, tyme, parsley and lemon juice and simmer at least 5-10 mins.
Serve over pasta
