canadian bacon omlette muffin

4 slices of canadian bacon, diced3 large eggs1cup egg substitute1/2 c kraft fat free cheddar cheese1 cup chopped onionsalt and pepper, to taste1tsp garlic powdercooking spray
lightly coat small skillet with cooking spray, then sautee the onion and candian bacon for 3 mins or until onion is softened. in a separate bowl, whisk together the egg, egg substitute, salt, pepper, and garlic powder until eggs are mixed throughout. coat a muffin tin with cooking spray, place 1-2 tbsp of the onion/canadian bacon mixture into bottom of each muffin tin, then ladel 1/2 cup of the egg mixture over the top of the candian bacon. Finally, sprinkle cheese evenly over the tops of the egg mixture. Bake a 350 for 15-20 mins, until eggs are no longer runny. Allow to cool for 5 mins, this will also give eggs time to firm up without getting rubbery. Enjoy.
