Boston Baked Beans

one package white northern beans1/4 cup dark brown sugar4 tablespoons of molasses one teaspoon salt1/2 teaspoon salt1/2 teaspoon black pepper1/2 teaspoon ground mustardone medium onion3 strips raw bacon
Soak beans in water over night covering 1 inch. Then,
Pour beans and water into a large pot, making sure that the beans are covered by at least 1" of water. Bring to a slow boil and let them boil for about 30 minutes.
Cut bacon into 1" strips and place in bean pot.
Take a whole medium onion and once peeled, place in bean pot.
In a large bowl (big enough to hold all the water that you're boiling the beans in) combine the following:
1/4 cup of dark brown sugar
4 tablespoons of molasses
1 teaspoon salt
1/2 teaspoon of black pepper
1/2 teaspoon of ground mustard
Mix thoroughly until you have a dark paste-like substance. Make sure you break up any of the brown sugar lumps.
Put oven on 300.
Remove beans from stove and strain beans over the bowl, allowing the hot water to start working on the paste. Place the beans directly into the bean pot. Once all the water is in the bowl, stir the liquid until all the paste is dissolved.
Add the dark colored water back into the bean pot, again making sure that the beans are fully covered by at least 1/2". If you have liquid left over, save it, you may need to add some later. If you don't have enough, just add some tap water.
Place bean pot into oven and cook for 5 hours; checking water level after 2 hours, then every hour thereafter. Do not stir! After the 5 hours, the beans should be done and you can take a spoonful out and check for firmness.
Once beans are cooked, you can turn the oven down to 200 and just leave in there for supper.
