6 Potatoes Peeled and diced20 Asparagus Spears chopped1 Onion Chopped1 Stick Blue Bonnet Margerine1.5 Cups Chicken Broth3/4 Cup Flour2 C Milk (Skim)7.5 Oz Velveeta CheeseSalt, Pepper, Garlic Powder to taste
Peel the potatoes and cover with water. Cook on med hi until boiling then add asparagus spears. While potatoes are cooking, melt margerine and add onion to sautee. Once onions are cooked, add flour to make roux. Add the chicken broth and cheese and cook until cheese is melted and it is super thick. Drain potatoes and asparagus and reserve water. Add veggies to soup and use water to thin out to desired consistency. Add seasonings and serve.
