Cafe Rio pork

Ingredients
3 lb. pork roast (butt or shoulder)1 c. brown sugar1 c. worcestershire sauce1 tsp. powdered ginger1 tsp. salt1 tsp. chili powder1 tsp. garlic powder2 Tbsp. minced onionsLater ingredients:1 c. brown sugar1 c. red enchilada sauce
Directions
Cook all ingredients (except for the later ingredients) in crock pot all day (I cook mine on low for about 8 hours). One hour before serving, remove pork roast and shred it. Dump out the juices from the slow cooker. Put pork back into crock pot and add the last 2 (later) ingredients (brown sugar and red enchilada sauce). Serve over rice, in a tortilla, on a salad, etc. Top with tomatoes, lettuce, guacamole, sour cream, etc.
