2 cups of Romaine lettuce (or lettuce of your choice)1 1/2 oz soft goat cheese (crumbled)1/2 cup diced yellow bell pepper1/2 cup diced fresh tomatoes1-2 tbsp of minced red onion1/2 cup canned black beansDressing:1 tbsp balsamic vinegar1 tsp olive oil (or extra virgin olive oil)1 tsp of greek seasoning (or your favourite...taco..lemon pepper...etc)pour the dressing on the salad, mix, and enjoy!
