Ingredients
Beans, red kidney, small canBeans, great northern, small canGreen Beans (snap), 1/2cBeans, yellow, 1/2 cCarrots, raw, 1/2 cup (baby or cut smallish and blanched with green and yellow beans)*Walnut Oil, 1 tbsp*Balsamic Vinegar, 2 Tbsp (I used 1 T balsamic and 1 T sherry vinegar)Cider or white wine Vinegar, 1/4 c*Splenda, 1 TDill weed, fresh, 1 t or to tasteShallots, 1 tbsp chopped Garlic powder, a dashSalt and pepper to taste
Directions
I used a "prince edward" blend of green beans, and wax beans, and carrots. I nuked them for a couple minutes, then ran cold water on them. You could of course do the same with any frozen, or blanch fresh veggies.
Rinse cans of beans and put all veggies in a bowl. You could get a lot more servings than 6 out of this.
Put rest of ingredients in a bowl and combine to make dressing. Pour dressing on veggies and toss to coat.
This tasted really good right off, and I have a feeling it'll only get better.
