Ingredients
Directions
4 large scallops or 10 small scallops4 oz large shrimp4 oz. tuna steak (not canned tuna, raw tuna)2 Green fresh jalapeno peppers1 can tomato paste1 can water4 fl. oz red wine (Cabernet works well)hot crushed peppers to taste1/2 large onion3 cloves of garlic
This recipe makes 2 servings.
Start by dicing the onion, garlic and fresh jalapeno pepper. Put aside. Spray cooking spray into frying pan. When hot add tuna steak and only cook for 15-20 seconds on each side. It is important that the tuna is still red and only the very outsides turn white, since tuna cooks very fast and will be cooked more later.
Put the tuna aside . Cut it into 1 inch chuncks and put in a separate dish. Save for later.
Add shrimp and scallops in pan. Cook until the shrimp turn pink. Put aside on a separate dish.
To start the sauce add onions, garlic and jalapenos to pan and cook until lighty brown. Add tomato paste, water and wine. Stir well. Cook for a couple minutes so the wine has cooked off. Add crushed red peppers to taste.
When sauce is one consistency add cooked shrimp, scallops and tuna and cook for only 30 seconds since the tuna cooks so fast. (Tuna cooked more than medium rare is usually dry). Take off the heat.
Serve with your favorite pasta or rice.
