Sauteed Vegetables and Spice Tofu

1 (16 oz) package spicy tofu, drained1 T. oil, divided2 T. lemon juice1/2 tsp salt1/4 tsp crushed red pepper2 large garlic cloves, pressed1 large zucchini, halved lenthwise and cut crosswise into thin slices
1. Place tofu on several layers of paper towels. Cover tofu with more paper towels; gently press out moisture. Cut tofu into 1/2-in cubes.
2. Combine 1 T oil, and next 4 ingredients in a bowl. set aside.
3. Heat remaining oil in large nonstick skillet over medium heat. Add tofu and zucchini; stir-fry 8 to 10 minutes or until tofu is browned and zucchini is crisp-tender. Add oil mixture; cook 1 minute, stirring gently.
Serving Size: makes 4 1-cup servings
