Cold Sesame Noodles w/ Chicken and Cucumbers

8oz. uncooked dried udon noodles1/4 cup rice vinegar2 tbsp. dark sesame oil2 tbsp. low-sodium soy sauce1 tbsp. honey1/2 tsp. ground ginger2 cups cooked bnls/sknls chicken cut into cubes2 med. cucumbers, sliced and cut in half3 tbsp. chopped dry-roasted peanuts
-Cook noodles according to pkg directions. Drain and rinse under cold water.
-Combine rice vinegar, sesame oil, soy sauce, honey, and ginger in a large bowl, stir w/whisk.
-Add noodles, chicken, and cucumbers to bowl. Toss gently to coat. Top w/peanuts.
Serving Size: makes 6- 1 cup servings
