Apple Ginger Chicken Stir Fry

Ingredients
½ tbsp ginger (fresh)1 cup apple juice2 tbsp soy2 tbsp sugar1 red bell pepper1 orange bell pepper2 granny smith applesSalt PepperSugar snap peasBroccoli/cauliflower mis2lb chicken1.5 tbsp cornstarch3 carrots
Directions
First you need to make the sauce. Take your ginger root and cut some off. Peel the ginger and then grate it until you have about 1/2 tbsp. Put 1 cup of apple juice into a bowl, mix in the ginger, soy sauce, sugar, and corn starch. Set to one side.

Take your orange and red bell peppers cut them in half and then remove the seeds. Cut both bell peppers into strips and set aside. Take the carrots and julienne them. I used frozen brocolli, snap peas and cauliflower for this recipe.

Cut your pan on to a medium high heat. Cook the chicken. Put all of the veg into another pan over a medium heat, then cover while cooking.

While you are waiting for the chicken to cook core and slice the granny smith apple.

When the chicken has cooked through add the chicken, apples and apple juice mix to the vegetables. Let this all cook together for 6-7 minutes. Make sure you stir often.
