Chicken, Rice, Spinach and Corn Soup

Ingredients
1 Cup yellow onion, chopped4 cartons Chicken Broth Imagine Organic Low Fat Low Sodium, (16 cup)3 cartons Imagine Low Sodium Vegetable Broth, (12 cup) 3 tbsp Celery seed5 bay leaves4 tsp Garlic Powder 2 tsp Lemon & Pepper Seasoning1 tsp cayenne5 cup Carrots, chopped 2 C Wild Harvest Organic Thai Jasmine Ricede-boned Costco Rotisserie Chicken2 cans Corn; Sweet Corn Cream Style 6 cup Spinach, fresh, chopped carefully
Directions
Saute onion on med high in large stock pot. When translucent, carefully add stocks. Add seasonings and bring to a boil on high. Add carrots and rice. Turn heat down to med high. Stir and do so occasionally. Cook for about 12 minutes. Test carrots and rice for desired tenderness. Remove from heat. Add chicken, corn and chopped spinach. Serve. Salt and pepper to liking.

    I liked it. The kids didn't. THey prefer blended soups and corn and chicken blended changes quite a lot the texture of the soup but it tastes great. I left out the vegetable broth and just added some vegetables like celery and potatoes to it. - 3/10/13
