Pastas with Turkey Meatballs

1# bag spiral pasta (use half of bag)1 large can tomato sauce1/2 of yellow onion, thinly sliced1 sweet bell pepper, thinly sliced or 6 small sweet peppers3 celery stalks, thinly sliced2 carrots, thinly sliced1 bunch of kale, stemmed and chopped (or a bag of chopped kale) steamed1 bag turkey meatballs (I use Trader Joe's)Extra Virgin olive oilseasoning- salt, pepper, dried thyme
Cook pasta, as directed on the package. Drain pasta in a colander and rinse with cold water, to stop cooking process. Set pasta aside until needed.
In a large saute pan heat the olive oil on medium-low heat. Add vegetables and a sprinkle of salt. Let vegetables cook until soft, stirring occasionally, about six minutes.
Add tomato sauce, dried thyme and meatballs. Let it all simmer, covered, until meatballs are heated through. This takes about ten minutes.
Add cooked pasta to simmering sauce. Season with salt and pepper. Serve in bowls and enjoy!
