cara's egg beater breakfast casserole

Ingredients
8 c egg beaters1 1/2 c skim milk10 oz pkg frozen spinach, thawed and drained3/4 c diced green bell peppers (can you any color)1/3 c sliced green onion2 c sliced mushroomssalt and pepper to taste1 c grape tomatoes sliced in half or tomatoe slices
Directions
add all ingredients but tomatoes together, pour into 13x9 casserole. add tomatoe slices or halves on top. Bake at 350 deg until middle just about set-may take about 1 hr -1 hr 15 min or so.

Serving Size: make 8 squares.
