1 tb virgin olive oil1 clove garlic, minced1 bay leaf, crumbled1/4 tsp. basil5 packed tsps. brown sugar1 can stewed tomatoes6 oz. tomato paste1/4 c. dry white wine1/4 c. minced parsley]10 1/2 oz. minced clams
Heal oil in a large skillet over med. heat; add onions & garlic and saute. Add bay leaf, basil, salt, pepper, brown sugar, tomatoes, tomato paste, wine, parsley and the liquid drained from the clams; reserve clams. Simmer, uncovered, stirring now and then, 1 hour, until flavors mingle and sauce is about the consistency of gravy. Mix in clams and heat 5 mins. longer. Serve with spaghetti or rice.
