Eggplant Goat Cheese Pizza

*Bread Flour - Unbleached, King Arthur Flour, 2 cup Goat Cheese, Soft, 8 oz Eggplant, fresh, 2 eggplant, unpeeled (approx 1-1/4 lb Onions, raw, 1 medium (2-1/2" dia) Olive Oil, .25 cup Yeast, bakers, 1 ounce Water, tap, 1 cup (8 fl oz)
Add yeast to warm water and allow to dissolve.
Add 2 tsps olive oil and 2 cups flour
Mix with dough hook
Allow to rise in warm place covered for 45 minutes.
Slice onion and carmelize in frying pan.
Slice eggplant lengthwise and brush with remaining olive oil
Soften under broiler for 4 minutes a side until slightly brown
When dough is doubled in bulk, punch down and shape into round in a pizza pan or free
Soften goat cheese in microwave and spread on pizza and add egglplant. Fill in spaces with onion.
Bake for 10 minutes at 450 and 10 minutes at 400
