SKINNY HUEVOS RANCHEROS

Ingredients
3 - egg white, fresh.25 cup - chopped serrano peppers, raw.5 cup - chopped tomatoes, red, ripe, raw.25 cup - chopped onions, raw
Directions
Chop tomatoes, onions, and serrano peppers.
Mix all ingredients in a mixing bowl, add kosher salt to taste.
On a non-stick pan spray some Pam EVOO cooking spray, let heat for about 30 secs.
Add mixed ingredients to hot pan and stir until cooked (about 5 mins)
