Slow cooker Thai Chicken

Ingredients
2 pounds boneless skinless chicken breast3/4 cup Salsa1/4 cup peanut butter2 TBS lime juice1 TBS soy sauce1tsp grated gingerroot1/4 cup chopped peanuts2 TBS chopped cilantro - optional
Directions
1) place chicken in a 3 /\1/2 to 6 qt slow cooker. Mix remaining ingredients except peanuts & cilantro, pour over the chicken
2) cover & cook on low heat for 8-9 hours until chicken is done. Remove chicken from cooker & place on serving platter
3) remove sauce from slow cooker & skim the fat off if there is any. Reduce sauce a few minutes in a sauce an on the stove
4) Ladle sauce over chicken & sprinkle with the chopped peanuts & cilantro
