Crockpot Lime Garlic Chicken & Rice

Ingredients
1 lb. bone-less skinless chicken thighs 1/4 C fresh lime juice1 1/2 C chicken broth2 cloves garlic, finely chopped1/4 tsp black pepper2 T butter or margarine1 C uncooked instant riceoptional: chopped fresh parsley
Directions
1. Place chicken in 3- to 4-quart slow cooker. Add remaining ingredients except rice and parsley
2. Cover and cook on low heat for 8-10hrs. During last 15 minutes of cooking, stir in rice.
