Fish & Orange Sauce

4-6 oz. flounder fillets1/3 cup orange marmalade, low sugar2 Tbsp orange juice¼ tsp ground ginger1/3 cup green onions, sliced
Coat a non-stick saucepan with cooking spray and add orange marmalade, orange juice and ground ginger. Cook over medium heat until marmalade melts, stirring often. Remove from heat, and stir in green onions. Place fillets in 9 x 13 pan coated with spray. Spoon the orange marmalade mixture over fillets. Bake at 400°F for 10 minutes or until fish flakes easily.
Substitute the flounder fillets with any mild fish, such as Dover sole fillets, cod, tilapia fillets, halibut fillets, pompano fillets or orange roughy fillets.
