Ahi Tuna with Mango Salsa

2 ahi tuna steaks (approx 5-6oz. each)1 large jalapeno, sliced into rounds1 nearly-ripe mango, cubed, skin on1/2 small onion, minced1 tbsp fresh dill, finely minced1-2 tbsp cilantro1 tbsp rice wine or white wine vinegar2 tbsp fruitty olive oil1 cup high pulp orange juice (enough to cover the fish while marinating)Pinch of Kosher salt
Marinate the fish for 30min to 3 hours.
Strain the solids out of the marinade & add to a medium skillet with 1 tbsp olive oil. Cook for 5-8min.
Sear the tuna for 1-2min per side & remove to a plate to keep warm.
Reduce the liquid portion of the marinade until it thickens into a glaze, about 4-5min.
Plate the fish & top with mango salsa. Serve with glaze & Florentine-style asparagus.
