Banana Blueberry Pancakes

Ingredients
Ingredients:3 cups All Purpose Unbleached Flour (or 1/2 and 1/2 unbleached flour and whole wheat bread flour)3 tsp Baking Powder1 tspBaking Soda0.5 tsp Salt1 tsp Cinnamon, ground1 tsp Nutmeg, ground2.5 cups Banana3 cups soymilk, plain (or whatever other non-dairy milk you use)0.5 tbsp Distilled White Vinegar2 cups Blueberries, fresh or frozen
Directions
Mix dry ingredients in large bowl. Mix wet ingredients in another bowl. Add wet to dry ingredients. Fold in blueberries. Drop 1/4 cup of batter at a time onto preheated (medium heat) griddle that's been sprayed with cooking spray or brushed with a little oil. Cook for about 2 minutes on each side. Enjoy!
